What Makes Good Honey?

Honey is the simplest of foods, and also one of the most varied. Its flavour depends on what the bees have been feeding on, which is why no two honeys taste exactly alike.

Look for origin and honesty

A good starting point is a producer who is open about where the honey comes from and how it is handled. Clear labelling matters more than any single buzzword.

Colour and flavour

Lighter honeys tend to be mild and floral, while darker honeys are often deeper and more robust. Neither is better, it is a question of taste and how you plan to use it.

Crystallisation is normal

Many honeys thicken or crystallise over time. This is a natural process and does not mean the honey has spoiled. Stand the jar in a bowl of warm water to loosen it.

Enjoying it

Try honey stirred into tea, spread on warm bread, or drizzled over yoghurt. Taste it on its own first, slowly.
